Okay here we go.... I have to say again.. this is AMAZING!!! Just amazing. The best raw dessert ever!! Better than chocolate carmel divine and easier too!

Grind up:
1/2 cup goji berries

Blend until smooth:
1/2 cup melted cacao butter
1/2 cup raw cashews
1/2 cup agave nectar

Blend in Goji powder (usually sticky, not really a powder)

Then by hand mix in whole:
1/2 cup cacao nibs
1/2 cup whole goji berries
The zest from 1 orange finely zested

Spread in a glass pie plate (think chocolate almond bark).
Chill in the freezer until firm.

WOW! WOW! WOW!!

It's this brillant red/orange colour, with the crunch of dried goji berries and cacao nibs. A sweet dessert, and also HUGE in antioxidents too!

WOW! WOW! WOW!!

It actually reminds me strongly of orange cranberry desserts that are quite common in Canada. YUMMY!!!

The best thing about raw chocolate... you have like 20 g and you're satisfied. We've only eaten the smallest chunk out of this fudge. Show me that happening with a regular family, and a standard chocolate bar! Never!!

Cashews are quite soft - I used a high speed blender for this, but I think a regular blender would do the job too.

Cacao butter you can melt by putting it in a bowl, over a  bowl of warm water.

its my personal conclusion that no where in australia is there more quality, inspirational, progressive, delicious, nutritous, environmentally sustaining cuisine being produced than between sheryl and miriam ;aka panda.

you 2 girls are sledge hammering the closed doors of the minds of every person that comes into contact with your foods.

its undeniable, life changing, positive grub!!!

Hey Sheryl,
I thought cacao nibs were too hard to chew and that's why we grind them. They are obviously not too hard for the teeth, yeah? Do you break them up at all? or just straight out of the bag?

Cacao nibs are actually quite soft; maybe just slightly harder than a roasted almond?? They are not brittle and I personally quite enjoy them straight. Also when you use them in things they absorb liquids and get softer. I think many grind them to mix up with other items for recipes and such. I love the dark chocolate bitter flavour but not everyone does! In case I haven't been clear... DARK CHOCOLATE RULES!! *grin*

Yeah ok ok I got it!!!! Made a choc peppermint slice last week, now there's something cool. Will post the recipe shortly. It 'was' YUM. I made a whole dehydrater tray full but that's bcos I have to share  :rolleyes: It still took ages to go as it is quite rich.

In the Nature's First law emails they are advertising the 'Wolfberry' Goji Berries discounted for limited time. These are supposed to be the best of the Goji berries around. Is there any way that RP could buy them in bulkish if there were enough of us wanting them to make it worthwhile for postages sake?????

What do ya think Piers & Sheryl? I would for sure take some. Anybody else?

YAY!  I asked this a week or so ago, but was quietly awaiting a reply :)   YAY!

Goji berries are yummy.  Make your tongue go very orange/pink!  With a salty aftertaste.

I just have to say, after 3 months of Phase one (no carbs, fruit or sugars of any kind) I made Sheryl's recipe above and the choc fudge. They blew off my girlfriend and my pants! So delicious! The white choc didn't really set properly so was sort of a goo, don't know what I did wrong but it added to the indulgence! Thanks so much Sheryl - these recipes are amazing!

Glad you enjoyed it!! I think the trick to having any chocolate recipe set is to chill it in the fridge or freezer. Works a charm!!
