Title: Super Duper, Yee Haa, Best Ever, Chocolate Not-Milk Shake

Yesterday I received a shipment of coconuts from www.sunrisecoconuts.com.au (Site is being reconstructed... will let you know when it's back online) and was sooooo excited. I made an awesome shake that rocked my world in more ways than one....

Meat of 2 mature coconuts  (I leave the brown stuff on)
water
2 vanilla beans
2 tablespoons of cacao powder
agave or sweetener to taste

Blend the coconut flesh with the water. You'll need enough water to get it blending well.

Strain through a nut milk bag, add your whole vanilla pods (if your blender is vanilla friendly... if it's not you might want to grind them in your coffee grinder first.) cacao and agave.

Blend again until smooth. Mine was a little warm so I added a tray of ice at this point and blended again. Yummers.

Beware... I recalled too late that coconut this way can act as a laxative if too much is consumed! Share with your friends! *clutched buttocks and runs....*

Sounds yum Jen how do you open a mature coconut without the thingy

Hey Pinky, hold the coconut in the palm of your hand over a bowl and hit very hard with the back of a heavy knife turning it after each whack. It will crack open and the liquid will pop out.

I then put each half crack down on an old board and whack it again mercilessly until it cracks again. Then a lot of the time with all this whacking the coconut just falls out or needs very little persuasion to leave it's shell. I can process three coconuts in less than 10 minutes this way. Should do a vid.

Jen, have you tried using a machete? I find it extremely amusing. I feel like it would be even more fun if I wore some warrior outfit to match it!

Hullo Gosia, No I've not tried a machete. But I would like to. Apparently the knives used by banana farmers are great also.

The knives I use are pretty full on. I'll post some photos later on tonight of my favourite ones. I've been trying to do a coconut opening vid for mature ones but my camera is not good enough. Great excuse for more coconuts to be eaten though isn't it!
