This is YUMMY and adored by everyone we serve it to.

Serves 4

Turn one coconut into coconut milk (see
http://www.raw-pleasure.com.au/index.php?option=com_smf&Itemid=68&topic=1467.msg13756#msg13756

Strain the coconut milk, and use as is. You want the liquid watered down coconut milk for the soup.

Place back in the blender, and add:

1/2 a large sweet potato
5 medium sized tomatoes
1 clove garlic
1 small hot chili (or less to taste - start with just a bit)
1 tablespoon lemon juice
Salt to taste (optional)
2 tablespoons raw olive water (if you have Botilla, or Moroccan olives - it's just yummy) (also optional)

Blend until smooth and creamy, and if you have a Vitamix warm a little too.

At our dinner last night our guests could not talk when they started eating this soup - they loved it so much!!

Two things to be careful of - make sure your coconut water is nice and fresh, and that the mature coconut flesh is also yummy before you use in this recipe.

I'm making this again today!!

And you can try it with your new coconuts!!!! *grin* You just need to get them from our driveway!

I think I likely won't be at the Byron Market tomorrow... we need to make arrangements so you can start enjoying these coconuts!

mmm,me too,have taken down the recipe,and think i will whip this up tonight,yum!

HAve discovered another yummy recipe,using coconut water.

1 ripe banana
1/2 red papaya
2 fresh dates
water from one small mature coconut (prob round 1/4 to 1/2 cup)

blend until smooth,very delicious...

Darn, no coconuts except the meat from about a quater of one - I definately intend on buying one soon though. This sounds phenomenal!

Ok, I have a date with a pumpkin farmer who plays the banjo (yes I'm serious) today.

Actually he's a friend who has stopped by the farm a couple of times but he said was interested in trying raw foods and I invited him over today for dinner.  I plan on making the above. 

FreedomB and all, I think I'm going to try and use coconut oil (and adjust other part of the recipe to compensate for this)  for some coconut flavor instead  of coconut water to see if that works.

Hopefully all will turn out great.

I plan to also make raw chocolate and other stuff.

well,i went shopping today,looking for red papaya.well,there was none,so i tentatively picked up the paw paw,chose the ripest one,after much sniffing(miss giggles,*grin*)..and to my delight,it was really nice..i whizzed it up in my trusty blender with ripe bananas,and 1 very squishy ripe persimmom,and 2 fresh dates.

I know it's fruit out've season,and not organic,but sometimes,i just feel like something tropical.after sunbathing today,i needed to complete my tropical feeling day.. rolleyes

And i will put the remainder in our salad tonight,it is so awesome and great for digestion.I will add it in with the avos and green,yum yum!!mouth is watering just thinking of it.

Ended up not making this dish (I'll have to make it for dinner or lunch one day this week) but had some other nice dishes from this Recipe forum section...Too many good things to try..

Raw'green'Neet, the pudding does sound delish and sensous as well:).   I like that it's simple to make, too.  Will have to include that in a future menu.  Thanks!

Sheryl - this soup is wickedly good!  I had to do some major improvising due to some missing ingredients, and machinery malfunctions, but it's superb!

Did you make it in the Vitamix to get a smooth and creamy consistency?  I had to sieve mine alas (crap blender - pooh!).  But, the upside was that I mixed the pulp with some corn meal that I had made, added more water and olive water, and hey presto - a medium sized pizza base.  Arthur's working on it now, along with drying some coconut.  I'm very chuffed to have made my own dried shredded coconut.

None of my tomatoes were ripe alas, so I had to substitute sun dried tomatoes, and I didn't have any garlic or chilli, so I used a teaspoon of a miss g spice mix that I just made. (dried onion, celery, chilli, and garlic - ground in the spice grinder).  It seemed to do the trick.

Oh, and the link to the coconut water on your recipe doesn't seem to be working, so I fudged that a bit too.  I added 2 cups of water to my coconut, and then whizzed and strained.

Next time I will do a faithful rendition - it's so good, and surprisingly filling.  I poured a big bowl and could only manage a third or so, which is excellent news as I now have something to take for lunch tomorrow.

The kitchen now looks like a 3 year old has been let loose because whilst grating the sweet potato I grated with too much oomph with the right hand, whilst the left hand wasn't paying attention, and I managed to send grated sweet potato flying across the kitchen.

I bet in a Vitamix you don't even have to grate the sweet potato *sigh*.  Sometimes I think I should 'cook' with a drop sheet.  rolleyes

I updated the first link for you Miss Giggles!

And yes... with the vitamix I just toss the sweet potatoes in! I might quarter them..  that's all. And you get a pure smooth soup as is after a minute of so of blending.

I am so glad you're having fun with this soup!
