Title: Kale chips

Hi all, Kale chips are sooooo yummy but I couldn't get any this week so the ones in the photos are made from asian broccoli greens. The kale works better but these are really nice too.

Two bunches of kale washed and torn into squares. Mine were about three inch square but there were many other shapes. No need to be shape fussy!

Coating

Juice of two lemons and their zest. 2/3 of a cup when I poured it into my measuring cup.
1/2 cup of water
1 cup of cashews
1 teaspoon of salt
1 tablespoon of olive oil
1/2 a large bunch of coriander (I used about a third but it wasn't enough)
2 cloves of garlic.

Blend the coating and mix it through your greens by hand until all of the pieces are coated on both sides. Arrange on teflex sheets in a single layer. If you have used a green other than kale you might want to make sure that it's not lying completely flat on the teflex. I had a few really stick to it. Make them like corrugated iron!

Dehydrate on 105 for about 4 hours. If they last that long. The first time I made them I had a guest and almost the whole batch was gone before they were done. These are seriously yummy folks! Only make them if you are out for enjoyment! Hehehe

Also, I made another batch of this coating today to use for salad dressing. Tops stuff!

Wow Jen sounds lush!  I've joined the Dehydrator world and so excited to try recipes :-) Let you know how I go with the Kale chippies....I currently have spiralised zucch & carrot platted together and made into little cups, apples, zucchini chips, sweet pot chips, celery and tomatoes dehydrating away.....very exciting but scary because I'll probably eat it all tonight !

Hey Freelea, those plaited zucchini, carrot cups sound like a lot of work! I've heard that spiralising pumpkin and coating it in some curry spices makes it taste like crispy noodles. I can't remember if they were covered in oil or not.

I did some kale chips tonight with a dip made from: olive water, olive oil, tahini, sea salt, fresh marjoram, and a whole peeled grapefruit. It's come out really nice. I should have cut off the pith on the grapefruit though as it's come out ever so slightly bitter. They have disappeared faster than they can dry. Same as earlier this week when I made my first batch.

Jennie did some for me last week, and we polished off 3 bunches of kale in about 10 minutes driving in the car. WOW!

Hi Jen,

Made the kale chips to your recipe last week and really enjoyed them, thank you. Decided to make them again at the w/e for a family get together and realised at last minute I had no coriander. Substituted a huge bunch of basil that needed using up. Didn't put in the lemon rind either this time.

It was amazing!! Real cheesy pesto flavour. One of the best things I've eaten since I've been raw. You must try it!!

We didn't have kale yesterday and Piers was craving these. So we gathered greens from the garden: lemon balm, basil, dandelion, French sorrel, comfrey, and a wild one we know is good. They are some of the best chips ever and the lemon balm has a real flavour kick.

I just tasted the dandelion one... and it's delicious. We used a simple dressing of tahini, lemon, olive oil, garlic and a pinch of sea salt.

I have some washed curley kale in the frigde will it work for the curley ones gia think?

Oh the curly ones are the best! They go a little crunchy. Soooooo good. Yum. I'm envious of your having kale! LOL. Who ever would have believed it?

Jen asked me to post here that I've used silverbeet very successfully too.  I used her exact recipe for the dipping sauce and had to dehydrate longer - tried the 4 hours on low to no avail so put them on medium for 2 or 3 hours more and they're as crisp as.  Perfic :)

But the dehydrating time could be that I have a round one, not an Excalibur.

I made a double batch last night with my good friend Sacha. He didn't have 2 cups of cashews so we used 1 cup of cashews and 1 cup of tahini. It worked really well and the marinade just straight would make a great salad dressing too. We added one bunch of coriander roots and all as the herb. I haven't got mine going yet... but an seriously thinking of dropping by Sacha's today!!

I bought out Tanya that we get our greens from buying greens for Jennie, Sacha and Piers and I. I had such a huge armful I couldn't see over it!! Too funny!

They are the best raw chips I have had!!!!

I made some awesome kale chips today with purple curly kale. I made em especially for Bill who is not a fan of greens but can't resist spicy stuff. So here is how I did it!

1 cup of water, 1/2 cup of sesame seeds. Mix these together and let soak while you wash the kale and get the other ingredients.

Add the juice and zest of two limes, a bunch of coriander including the roots, 1 teaspoon each of chilli flakes and salt.

Blend and toss the kale through it. Put the kale on the dehydrator trays and dehydrate! They are sooooo spicy. This would also make a nice salad dressing. I'd recommend putting some cashews or avocado in for a dressing though as it was a little watery.

I tried this yesterday with vine leaves. I didn't have any coriander so I just left it out and added a small amount of fresh green chilli. They were fantastic. I'll be making them again today, only in larger quantities.

OH I bet that tasted nice! I loved my kale chips. Ate most of them before they even got in the dehydrator! Hehehe. Luckily I had enough left for 2 1/2 trays but they are nearly all gone now. Yummmm! Glad you like em SuzF.

Just thought I'd mention I don't use the solid sheets when making these... I put them right on the mesh sheets. It works great. Off to make more now.

Just making some more! Here's the recipe....

1 cup of macadamias
1/2 cup of water
1/2 cup of freshly sliced ginger
1 tablespoon of agave
zest and juice of three lemons (1/2 cup of lemon juice)
two pinches of salt
Kale!

Some garlic or chilli would have been nice in these too. Very nice. Bill likes the spicy ones best and he's not easy to get greens into so hopefully these will be a big hit!

I agree about the sheets too. I stopped using a teflex sheet. I still just put one at the bottom of the dehydrator but just to keep it easy to clean. These are pretty nice. I've loads of kale left (I bought 7 bunches today) but I've lost my cashews! How did I do that? I've been searching for them for ages and can't find them. So loads of washed kale ready to go when I find my cashews! Yaaaaaaaaaaaaaaaay.

I came home with 16 bunches (very large) of kale, curly kale and broccoli greens. Kale chips galore. Piers took a photo of my market shopping this morning and is going to post a photo soon. I better go rescue all the food outside soon!

Oh my goodness! Last night as I was going to bed I thought "Oh my goodness the chips!" and ran to my dehydrator. I've just started munching on them and they are soooooo good! Ginger agave is now my favourite chippie!

Well, I made a variation myself today. :ohyeah:
I used 1/3C lemon juice and 1/3C apple juice, zest of 1/2 lemon, 5 medjool dates, 1C sunflower seeds and 1 1/2t curry powder, 3/4C water, 1T olive oil, 2 cloves garlic, 1 bunch dill frills and a handful of loose baby spinach and salt. They aren't dehydrated yet but taste very yum!! Not all the fam liked the lemon so hopefully these will suit the rest.  If not I know for sure that I will def enjoy them. Have not seen a lot of these posts and will have to try some of the other recipes too. These are such a hit, Jen! I'm thinking of trying spinach leaves too as they are very nutritious also.

Hi Rabbit. What a combination. They sound like they will be awesome. I've used broccoli greens too and they are just as nice. Sheryl has used all sorts of greens. The thicker leaves work well. Someone was making them with no nuts at all and they worked really well. Let me know how they go.

Thanks for the inspiration with the crackers too. I've been making crackers left right and center and they've been disappearing FAST!!!

Well Jen I have finally made some and can I say WOW I know I said in my thread that the one I made before isnt that good but these are (I finally followed your recipe to the letter) I used spinich instead of kale (cant buy Kale here dont ask me why) and I think it taste fantastic. As May was saying that it took her longer doing it and it did for me as well so it must be the spinich. Pete and I are going to the movies tonight and you can guess what I am taking with me cant you  :yahh:

Anyway Jen thanks for the recipe I have also used the dressing over salad as well (made too much but that is good) and the salad is so yummy.

Jen darling, I've been wanting to make these ever since I first joined - you posted the recipe right at the start of my raw journey but I've only just been able to get me some kale! Thank goodness for veggie patches. lol.
I made your exact recipe last night not sure what to expect... but oh my, these are so good!! I'm not surprised you and Sheryl ate 3 bunches in one sitting - I could have done that on my own :laugh: Thanks so much for sharing your creations :mwah:

Hullo gawgess! Thank you for your appreciation. They are the best things aren't they! I've noticed that you have taken an interest in 811 as well. These can easily be made without the nuts. Sheryl and I did some other ones just with a little lemon juice and salt and they were tasty too. (I know salt's not 811 but at lower in fat.... brownie points for me.)

What a great idea!

I just happened to get three bunches of kale yesterday at the food co-op, so just whipped these up and have them dehydrating at present, looking forward to having them, used some of the dressing on my salad for dinner, two of my kids loved the dressing as well :)
