Q. If heating/cooking destroys the enzymes in fresh food, does freezing harm/alter the enzymes in any way? im talking about freezing some fruit for a smoothie or juice. Heating above about 40 degrees C actually kills the enzymes in food - freezing slows down or stops the action of these enzymes - the analogy I use is, cooling/freezing is like putting the enzymes to sleep and then when they warm up again (eg when they're in your body) they wake up again. This process can damage them, but not to anywhere near the extent that cooking does.
