Title: Buckwheat soaking... how long? Post by: No-Frontiers on Wednesday 12 March, 2008 Having a guest interested in RAW at home staying for a couple of days and thought making a sort of 811 Pizza for celebration ...
so here we go... how long to soak buchkwheat... i read recently in some recipes calling for different lenghts/hours... some say (a well known Raw Chef Educator) BuckWheat needs only 40 minutes, i never tried that? other again the usually 6-8 hours depending on the temperature... thinking to make with heaps of yummy tomatoes (keep em fresh like bruschetta), basil and other veggies like zucchini , red bell pepper, plenty of greens like rocket on top... anyone here able to tell me how long you are soaking it? thanks in advance... Title: Re: Buckwheat soaking... how long? Post by: missgiggles on Thursday 13 March, 2008 Hi Ivan,
I have not read or heard of 40 minute soak time for buckwheat. I just consulted two of my raw recipe books, and 6 hours is noted. From memory, most of my other raw books use the same timeframe. For me, sleeping time is "soaking time", so I generally soak overnight - just because it's convenient & easy. With buckwheat specifically, I always tend to actually sprout it, although I don't know why. Perhaps I just like seeing those little "tails". -_- So, I soak, and then leave it in a colander in a warm dark spot, rinsing two or three times a day, for an extra day or so. Buckwheat sprouts fairly quickly, in 1 or 2 days, depending on the weather conditions/temperature. Your pizza ideas sound amazing - a plump juicy tomato like an Ox Heart would be wonderful, teamed with the basil and red peppers. Delicious! Sheryl's recipe for raw muesli that is buckwheat-based is phenomenal. Here it is, in case it is something that you might like to try drying on the hood of your van on a hot day... [It's equally as good with almond milk, or just eaten like a trail mix/snack] Ingredients: Hulled Buckwheat Pecans and other nuts you love Orange juice Dried figs Currants Apple Coconut, shredded Cinnamon, organic Agave nectar The nuts and buckwheat were soaked separately overnight, rinsed and drained well. Pecans were tossed with some agave nectar and dehydrated separately to intensify flavour Coconut was grated Apple was cored and finely chopped (left big enough to taste) Oranges were juiced and blended with a handful of dried figs to sweeten cereal Everything was mixed together, then about 10% was blended in our Vitamix until fine, then mixed through the rest to stick it together. This is a pretty general recipe - you can alter to taste! I think the coconut and apple really added alot, and Piers loved the fact that it sort of stuck together in big chunks! It does need a dehydrator - I laid it out thin on the teflex sheets and dried about 10-16 hours until very crunchy. I wished I save some for us!!! I will definitely have to make more. If a hot dry climate you might be able to do this outside with a cover to keep bugs off. I love my Excalibur though! Title: Re: Buckwheat soaking... how long? Post by: No-Frontiers on Thursday 13 March, 2008 the buckwheat has been 'dreaming' in the water during the night as you suggested Michelle... :-)
6-8 hours to me sounds preferable, will ask the RAW CHeF directly about his 'Quick Pizza' version and post it... as for the sprouting issue i'm with you, sprouting adds this 'lifeforce' to BW and to other foods... i sense more enzymes are present when sprouted and different chemical composition, {thats just an idea...} btw having not so much time to make the pizza and reaallly-reaally hungry guests at home  , some soaked buckwheat begin to sprout already in the Excalibur!!, where i gave him the first 2-3 hour of dryness before proceding with the rest of preparation, ie. making the pizza!... i did put buckwheat, tomato, celery, some carrot in the food processor and made a simply 'pizza'... if i would have some soaked sultanas that was going to be perfect... will add maybe in tomato sauce... no nuts , seeds or salt for the moment cause i'm enjoying it (and my guests too)... i do not own a VAN by the way - all the cars, trucks, wagons who are wandering/wondering round thiis World are often happy to let me in for a short or longer ride... Hitchhiking (lets call it carsharing ) is a good solution if you have time, patience, trust and on your own... you can get anywhere everywhere and let the Universe decide... when BIO-FUEL or VACUUM ENERGY are more avialable i will think about though... the recipe is very great Sheryl....! thanks for re-posting it MICHELLE, as always great and kind... Here a short poem: LAUGHTER & HAPPINESS IS WHAT WE NEED, MAKING RAW-PIZZAS IS PART OF THIS CREED, WHEN YOU SHARE THE BEST THINGS WITH PEOPLE 'ROUND, THE UNIVERSE BLESSES YOU... AND ALL COMES IN TIME, YOU GOT TO BELIEVE RIGHT - CAUSE THINGS ARE OK, THE PAST HAS JUST MOVED NOW - A NEW LIFE AWAITS, WE COME MORE TOGETHER AND LIVE LIFE AND HELP, MESSAGES FROM OUR HEART WILL LIFT US n'THE AIR CAUSE YOU ARE MY BROTHER AND SISTER AND FRIEND, AND LOVE IS FOREVER - AND LOVE MEANS 'NO END'!
