all you need is blending:

a base of Strawberrie , Banana and Fennel...

and -optional- add what you want or like :

mint leaf, parsley , celery , lime peel etc.etc....

Hubby makes my juice for my smoothie and ALWAYS adds fennel.  It is great for the digestion.  I recon it would go great as a salad pear, fennel lettuce and walnut salad with may be a few sultanans (?) will try it out soon.

Yep Frang, good thinking - fennel and pear are AWESOME together in salad. I love to add some rocket and even some orange segments too (blood oranges if you can get them yum yum!)  yahh
I found a great recipe online one day for blood orange salad dressing - i tweaked it a bit as i didn't have all the ingredients - i used hazelnut oil instead of walnut oil (i think those were the oils) but gosh it was beautiful!
