Are you saying that the free persimmons are the Fuyu persimmon ( i.e. Fuji Fruit)?
And they are very soft ,red and ripe now?
And you got them free because the other Asian customers only like eating them when crisp?

That is confusing because it seems contradictory.
Soft is always red,ripe and edible.
So how can they be ' soft ' AND unripe?

What variety (name/hybrid/clone)of persimmon is it?
Is it an astringent persimmon ?
Did a shop give them to you free?
If they are not yet ripe,then why did they give them away free ,instead of waiting for them to ripen and then sell them?
It sounds like it is an astringent variety because you aren't eating them now.
Do you want to know how to put it somewhere for 24 hours so it is soft ,sweet and edible?

The following information shows that sea water is about half as salty as the brine for curing olives.
Wikepaedia says that sea water has 1% sodium and so 3.5% salt.
So 1 cup of sea water contains 2.5 grams of sodium .
The recommended maximum daily intake of sodium might be about ,or less than,2 grams.
A teaspoon of salt contains 5 grams of salt which contains about 2 grams of sodium.
And Wikihow says that Olives can be cured in a salty brine of 6.5% salt(65 grams/1/4 cup of salt per Litre of water)
 
ZINC in grey/celtic/macrobiotic sea salt:
                                                         Amazingly 5 grams/1 tsp of grey sea salt contains 50mg/2.5 times the RDI of ZINC.
According to the label on the sea salt, that is.

I am trying to cure olives in a cup of water in the freezer .
Astringent Persimmons lose their astringency when frozen for 1 day .
And will try curing in lemon juice at room temperature.
Why are only Green Olives recommended for unsalted water curing?
I am also now curing Black Olives in unsalted water as an experiment.
