I'm all out of raw chocolate powder *gasp,horror*, thankfully some is on the way, hip hip horray! cheesy    So this is what I made do with this morning, White 'Hot' Chocolate , which didn't really taste one bit like one having to make do - delicious.

I already had some Hazelnut Milk made up in the fridge so I just added to this from my pantry.

Hazelnut Milk Recipe
1 cup of hazelnuts, soaked
3 cups of water
1 vanilla bean
small dash of raw honey to taste
half teaspoon of cinnamon

Blend/process ingredients above then strain through a nut milk bag to derive your delicious hazelnut milk.

White 'Hot' Chocolate
hazelnut milk
small piece of raw cacao butter
sprinkle of cinnamon
generous sprinkle of nutmeg (I think it's the nutmeg that makes this)
small dash of raw honey/agave to taste

Blend all of the above excluding the cacao butter, then tip into a saucepan, add cacao butter now and place onto the lowest heat.  Careful to stir constantly just until cacao butter has melted and milk has reached a nice warm temperature.

If you don't like the idea of using a hotplate to warm your drink over then you could have your drink hot via using hot water to start with when making your hazelnut milk and then adding ingredients to blend.

Mmm-mmm, Blue Nelly!

I have a big bag of fresh-picked hazelnuts from the local hazelnut farm on my kitchen bench. I have been inspired to go individually shell them til I have a cups worth to make this recipe.

Hi Blue Nelly, yes fresh hazelnuts are the best. You can appreciate them more when you individually crack each one to eat it. It stops me over eating them as well!

Well, I individually cracked all those nuts to get a cup-full, blended them into beautiful milk, then got my cocoa butter out only to realise it was past it's best Sad. It will be destined to the bathroom for some home-made beauty products. I followed the rest of the recipe with some carob powder and it was really good. I am longing for that white hot chocolate experience so will re-try again with some nice RP cacao butter next time!
