"Peanut Butter & Jelly" Sandwiches
an apple, cored and sliced into rings with a mandoline or knife OR a banana per child, peeled and sliced in half lengthwise
any raw nut or seed butter
sundried raisins, either unsoaked or soaked and blended with a bit of the soak water
optional: shredded coconut, sunflower seeds, raw honey/agave

spread butter on fruit. top with raisins and optional ingredients if using. top with other half of fruit. enjoy!

my boys love these- and they are cooked fooders! they also enjoy adding the ingredients after i've spread on the butter.

Creamy Banana Pudding
4 ripe bananas
1c sunflower mylk pulp
vanilla, nutmeg, & cinnamon, to taste
sliced banana, flax meal, ground nuts (optional)

blend bananas until smooth. add pulp, vanilla, and spices and blend until smooth and well blended. pour into individual bowls/dessert cups and chill for 30min. top with optional ingredients and gobble with delight  cheesy

I bought two bananas down the street yesterday. They cost me @3.67 so I will try this recipe out whenever the bananas crop returns to normal.

Summer Fruit With Whipped Sunny Cream
2 peaches, pitted and diced
1 nectarine, pitted and diced
1c blackberries
1 1/2c soaked sunflower seeds
3-5 dates, pitted and soaked for 30min or more in a cup of water (reserve)
1/2-1tsp vanilla


toss fruit and berries together in a serving bowl and set aside.
in a blender, cream seeds with 1/2c of soak water. add vanilla and dates and blend until smooth adding more soak water as needed to achieve a creamy consistency.
spoon onto tossed fruit and serve.

*the cream is a healthier version of Jordan Maerin's cashew cream (that i was addicted to!). you can even use leftover cream to stuff apricot halves or cherries.

1/2 sheet untoasted nori, torn into squares or strips
1/4-1/2c soaked almonds, drained well

put nori and almonds on a plate and let child wrap each almond in a piece of nori and enjoy!
(my almost 5yo loves these! his almost 3yo brother eats the almonds alone...)

2-3Tbs chia seeds
1c fresh apple juice
2c frozen blackberries (or any frozen fruit should work)

soak chia seeds in juice for 30min. blend with fruit until smooth. great for warmer weather.

1 head of cauliflower
1 carrot, peeled and diced
1/3c parsley, minced
1/4c sunflower seeds

process cauliflower until it resembles grain and put into a medium mixing bowl. add parsley, carrot, and seeds and mix well.

one lemon, juiced
1 large clove garlic, minced
2Tbs olive oil
2Tbs shoyu

whisk together well. pour over salad and mix well.
serve immediately or chill or bring to room temperature.

*none of my boys are fans of cauliflower but this was a hit! my oldest and i even had a friendly duel to see who would finish it off (we wound up splitting it evenly, thankyouverymuch  cheesy)
**this was one of my fave cooked vegan meals when i was preggers w/my 4th and having it raw is exquisite. this is another raw meal that makes me tear up because it's come out so beautifully... (ah, i'm ridiculous... lol)

A delicious creamy chocolate avocado pudding

1 Avocado (make sure it's a yummy one)
1/2 Water
1-2 Tbs Cacao Power
Agave to taste

Juliano has a similar one that I sometimes use to dip strawberries in -

1 avocado
1/2 cup maple syrup (not raw though..)
1/4 cup carob powder

I'm sure you could do that one with agave too.... or even soaked dates!

We've been doing that regularly lately at dinner parties... fruit plates with dipping sauces. In fact Harley's Bon Voyage trip was exactly that as the main course.

I'm sure kids would LOVE the idea of dipping sauces for nicely cut fruit.

i know my boys do- as long as it's chocolate... i'm fiddling with "vanilla" too but find cashew cream, thinned out a bit works really well. i made one with mesquite that came out butterscotchy. i thought it was really good with apples but the boys didn't go for it at all! lol

those apple "sandwiches" are delish!!! my kiddies scoffed them down as did hubby, something fast for afternoon munchies home from school & work.

Joss yes nanas are expensive, my boy (nearly 3) can eat 4 in one sitting easily and they are his favourite fruit, so I do buy but will be happy when they arent so $$$$
