it's delicious Joss...i have chia sitting on the shelf,and had no idea what to use it for...find it too heavy with fruits ect in the day...but was great in this salad,extra nourishment...give it a try,think you will enjoy,and it digested to well...

Hi All... 

Those salads and sauce look wonderful!  Mmmmm....

Hey Joss... your sundried tomato dressing looks good!  It is a great idea combining that... if you still want more bite in it... you could add some herbs like basil, oregano, flat leaf parsley.  For tang you could add raw apple cider vinegar (with a touch of agave or Stevia if you want).  For zip you could add some cayenne, jalapeno, horseradish...  garlic or onion.  I love sundried tomatoes...

Here are a couple of tomato dressings...  you could add some sundried tomato in them.
You can use dried herbs... just use less.  You can adjust ingredients to what you prefer.
You can substitute raw apple cider vinegar for the other vinegars if you want.

PARSLEY TOMATO DRESSING:
1/4 C tomato juice
1/2 C fresh tomatoes, chopped
1-2 Tbl minced onion
1/4 C chopped parsley
1 garlic clove, minced
1/2 tsp fresh oregano
1/4 C red wine vinegar
1/2 tsp black pepper or to taste
dash of salt if wanted
dash of cayenne or to taste
*Puree smooth... let flavors blend


TOMATO VINAIGRETTE:
1/2 C tomato chopped
2 Tbl white wine vinegar
1 1/2 tsp fresh basil (or 1/2 tsp dried)
1 1/2 tsp fresh thyme (or 1/2 tsp dried)
1/2 tsp dijon mustard
*Puree smooth...

Oh. My. Goodness. Sheryl, I made this salad

2 ears corn, kernals cut off
1/2 punnet cherry tomatoes, cut in half
1 stick celery, sliced on the vslicer
2 carrot (big), sliced on the vslicer
1 punnet strawberries, chopped
1 bunch corriander/cilantro, chopped (leaves only)
1 small bunch asian greens, chopped
6 Moroccan olives, chopped
1 avocado, chopped
1 lime, juice squeezed on
Splash or two of olive water

for lunch today and it was absolutely amazing. I left out the olives, olives water and coriander and replaced the lime juice with oj and it was heaven! Thanks so much for the inspiration!
(PS I also made a lot less!)

grated butternut pumpkin
celery chopped finely
corn from cob
tomatos
avocado
squeeze fresh ojuice over top...devour this delight..so good...
