That website says that unroasted cashew nuts (and oil) are toxic!

I eat unroasted cashews all the time!!

Nahhh.... the nut is in a thick skin, which has some not friendly compounds on the surface. It's all gone when shelled. If not the cashews would be ruined (it's like a sticky sap that drips out). It's this compound that has the boiling or roasting most cashews before shelling (so they can mass shell and not worry about this compound dripping onto the nuts. The really raw cashews we usually sell (will again soon) are hand shelled carefully to avoid this, and never exposed to heat.
