I made the most delicious recipe last night in my high speed blender!! It was chocolate ice cream with the most amazing texture. The bananas added chill and a really creamy texture, however didn't influence the taste - the cacao and vanilla ruled!

3 young coconuts (3 for flesh - half of one water)
2-3 tablespoons cacao nibs (or more to taste)
1 vanilla bean
4 small frozen bananas

1. Blend up the cacao and whole vanilla bean with the flesh of 1 coconut and the water of half a coconut.
2. Blend until smooth.
3. Add the flesh only from the other two coconuts. 4. Blend.
5. Add the frozen bananas.
6. Blend until smooth - use your tapper if needed to make it mix properly.

If you don't have a high speed blender you might be able to grind the cacao and vanilla in a coffee/spic grinder. I'm not sure it would really work though.

Enjoy,
Sheryl Duruz
