A friend of mine highly recommended this recipe. I need to get my iodine intake up so I've been looking for Dulse recipes.

Mock Salmon Pate
inspired by Katherine Dichter

Ingredients:

2 cups almonds, soaked overnight
1 cup celery, finely chopped
1/2 cup green onions, chopped
1/4 cup water *see note
2 med. or large carrots
3 tsp lemon juice
Dulse Flakes, rinsed

romaine lettuce or vegetable sticks (to serve)
Parsley (garnish)

Instructions:

Run the almonds and carrots through a Champion juicer, using the "blank" plate to make a smooth pate.

Mix all ingredients (except the parsley & lettuce) in a bowl, adding the dulse to taste.

Form the mixture into a rounded loaf, and garnish with parsley greens.

To serve, take a lettuce leaf and put a spoonful of mixture on top or eat using vegetable sticks (carrot, celery, beans etc)

Notes:

You can use a really good blender instead of a juicer if you have to. Just chop finely then blend.

Drain the almonds well – maybe even leave for a while. It is important not to make this too wet. So leave the water out then assess if you need it.  It will depend on how juicy the carrots were.

If using dulse flakes add a fair bit then let it rest for the flavours to develop before tasting. if needed add more dulse to make it more “fishy”

This recipe serves 6 to 8!

It is awesome warmed to blood heat.  (We had masses and got sick of it cold) Use sunlight, dehydrator or if your oven is flash use one really low (ours goes down to 40 degrees!)
