I made this recipe from Alissas book tonight. I've made it before and liked it but this was the best ever due to a few variations in the ingredients and the presentation.
2 carrots + 1 cup of carrot pulp (from the juicer)
1/2 cup purple cabbage
1/2 red capsicum
1/2 purple onion
I put all this through the mincing plate on the Samson. Then transferred to the f/processor & added 1 cup mushrooms, 1 cup pecan nuts (not soaked...but I guess I should have/could have?), 2 tblspns olive oil, salt & pepper to taste, 1 tsp ground cumin, dash of cayenne pepper, handful of parsley (coriander would have been nice but I didn't have any).
Blend to a paste then make into patty shapes & dehydrate for about 8 hours.
Presentation:-
On a bed of bok choy (or any green leaf, that was just what i had in the fridge). Then top with avocado (or could be guacamole if you can be bothered) and salsa.
Salsa: finely chopped tomato, shallot, mint + grated yellow capsicum & radish. Juice of a lime and a dash of salt.
This looked and tasted wonderful and was well received by DH too :D - shall definitely be making it again. Downside was the kids didn't eat it...

but I will try again one night when they aren't so tired....
