I've just made some totally yummy zucchini hommus - but there's enough to feed an army. Could some kind soul please let me know how long it will stay fresh in the fridge? It has fresh lemon juice in  it and all the other ingredients you would expect.

I think you've probably only got a couple of days (perhaps 3) - maybe a raw zucchini hommus party is in order. 

The lemon will help preserve it a little, but with the high water content of the dip, it's going to go off sooner rather than later.

If in doubt, just give it a sniff - the nose always knows.

Yum! Seems to me it's good for a week anyways - it's pretty sturdy stuff, I used to make it a lot and sometimes forget it in the fridge, as rowdy_bliss_bandit said - let your nose and taste buds guide you!  Thanks for the reminder, I've got zucchini in the fridge, hmmm....zucchini pasta pesto or hommous???!!!

It's nice to know I have bit more time up my sleeve to finish this mammoth bowl ;-)

And next time I am making a quarter of what the recipe says!

Sam - this is something it took me a while to learn, especially as raw recipes don't usually tend to include serving sizes.....something along the lines of "serves a famished family of 14".  laugh

Now, most (if not all) recipes I tend to automatically make half portions of, sometimes less. 

Otherwise, because one never likes to waste food, one can be having a capsicum seed pate, three times a day for what seems like forever.  smiley

Hi LoveSpirit,

I've just come across this now and so this might be a bit too late and you probably don't have a dehydrator anyhow just yet but usually with stuff like that you can dehydrate it into cookies or spread between sheets of nori and dehydrate that.

you could mandoline some zucchini into strips and spread those thinly with the hommous and dehydrate. Or you can invite a bunch of rawbies from Sydney over to play and help you eat it all up!

Hey Jen

You were correct on both counts - I don't have a dehydrator and actually my hommus is all gone. However you have given me a chance to brag so thanks ;-)  ohyeah

I took a big bowl of Hommus to Glenworth Valley where I keep my horses... and passed it around to horsey friends, with carrots to dip. It's the first time I've unleashed my raw 'cooking' on unsuspecting friends. I was surprised and delighted to see that they were practically fighting over it which was very gratifying.  yahh

I can't say the same for the horses though. We were sitting in lush emerald green grass and the horses were all over us begging for more treats becasue of the whole carrots we were using to dip into the hommus. Some cruel friend gave my horse a carrot covered in hommus (well he was asking for it!) but Dougie was totally unimpressed and pulled lots of faces before wiping his revolting garlic-y hommus-y mouth thoroughly on the grass. Needless to say we were helpless with laughter but I did give Dougie lots more nude carrots to keep him happy while the humans had their hommus party.  rofl
