perhaps i am in 'mexican mood' lately and perhaps someone knows that Gazpacho is a RAW Soup and Mexican National Dish served in hot-hot-hot summer days for cooling purpose (usually served with ice)...
the Traditional recipe is quite different from the below one i made today for lunch --- also cause the days are not that hot like down in Adelaide for example

Adding some 'very hot' dried chillie makes it a very yummy warming soup...to enjoy also in autumn and winter time i guess...
Recipe is:
3 medium Zucchini and 3 cucumber grated in the same bowl
add 5-6 (or how much more you want) cherry tomatoes
pour over the sauce of:
1 big Mango
2 big-big tomatoes (or 4 medium)
1/2 red bell pepper
1 stalk of celery
some basil and/or parsley and/or coriander
1 small hot dry chili
put in a soup plate and 'sprinkle' with 1 sweet corn you have blended fine in food processor as sort of 'cheese'
thats it! Enjoyable good also rolled in some salad wraps, eaten with rocket, baby spinach or whatever you want....!
