So was wondering if Irish Moss can thicken coconut water?

I was thinking something along the line of jelly cups with dried fruit in it. I find dried fruit and coconut water go well together the taste is divine. Especially dried cherries.

So i want to add dried fruit such as dried cherries, raisins and dried apricots into the coconut water but the only thing i can think of too thicken the coconut water is Irish Moss. Chia is still too runny. Havent  got Irish Moss on hand Sad
