I have been trying to load up on as much greens as possible. Today I was going to make a guacamole as I had perfectly ripe avos that it would have been a shame to waste when I was struck with an idea...

1 bunch of spinach (about three large handfuls)
1/2 bunch of coriander
Juice of 1/2 a lemon
cumin
salt
garlic

Blend the above and serve with veges... like this!

Bill's lunch

My artwork!!! He wrecked it... ah well. At least he enjoyed it. Yummm.

I was going to make mine as nice as Bill's but you know... I was hungry. I just wanted to eat.

Enjoy!!!

Yes! With avocado. How did I forget that vital ingredient? Thank you so much for your observant reminder! I hope you try it and love it like I did.
