I haven't looked into this yet in detail (we don't use oils except for coconut and cacao) but I've heard rumours of this before. If you're buying olive oil, it's always great to buy from small producers (ideally ones you know).

Anyone else have any info on olive oils?

my understanding is that anything but 'extra virgin oil' is inferior. Only the first pressing is cold pressed, then solvents are used to extract the oils.

While in Hobart I used to buy a wonderful fruity blend fron Crete that tasted the way olive oil should taste. Now whenever we buy oils they last forever as we by a 4 litre container. We usually buy Italian or Spanish extra virgin oil. I am a big fan of Spanish oils. these usually have a more fruity flavour then Italian.

I guess its the same as most things, you get what you pay for. If you wouldn't put an inferior oil in your car. Then why put one in your body? Cost should be the last thing you consider when buying foods.

I have a bit of a question

Olives are naturally bitter, so they use salt/acid etc to draw out the bitterness. How do they get rid of the bitterness in olive oil?
