I made this for Bill last night and he said it was one of the best raw dishes he has eaten. He doesn't often say much about food apart from "s'awright" so this was high praise indeed!

Flesh of one mature coconut
Around 2 cups of water

Blend the above together and strain through a nut milk bag. Put liquid back in the blender and add...

1 bunch of coriander
1 clove of garlic
a knob of ginger
fresh chili to taste
juice of 1/2 a lemon (would have preferred lime but had none)
curry powder to taste
salt

Blend again and pour over diced

red onion
lebanese cuke
capsicum
snowpeas

and shredded carrot.

I made this really quickly. Only took 20 minutes and dishes were easy to clean! One blender jug and a bowl! Oh, and a knife and board too.

This soup was quite warm from blending the coconut but not hot. However because of the chili, ginger and curry powder Bill felt like he had imbibed in a hot dinner.
