Mmmm. I made this last Saturday night and they were awesome!


Balls...

Walnuts soaked one hour or so.
shrooms
curry powder
salt
fresh coriander.

In your food processor whiz the above ingredients until a large ball forms. Take this big ball and make little balls from it by rolling small amounts in your hand. Put them on a mesh tray and pop in the dehydrator for 6-8 hours.

Tomato sauce

Dried tomatoes soaked around 1/2 an hour. It doesn't really matter. you can put all of the soaking ingredients in water at the same time.
Fresh tomatoes
ground cumin and coriander
knob of ginger
clove of garlic
salt and pepper

Put the above ingredients in your food processor and whiz until a chunky sauce forms. I strained this through my nut milk bag as I don't like my noodles soggy. You can use this liquid as a soup base if you like. Something like gazpacho would be nice. Then I put it in a bowl in the dehydrator with the balls to warm it.

Raita

Around one cup of cashews soaked
the juice of one lemon
a clove of garlic
salt
fresh coriander roughly chopped
grated cucumber that's been strained. You can drink the juice strained off this. Yummm!

Blend your cashews, lemon juice, garlic, salt, until smooth. Just prior to serving add your coriander and cucumber. Mix in yummm. This could be eaten on it's own it's so good!

Dammit! Lost a post...

Ah well. retyping now...

Sanghama blessed us with her presence tonight for dinner and we made a yummy dinner for her. I was going to make the curried meatballs into a lasagne but I had no zucchini so I made wraps instead!

The walnut paste was different because we hadn't any shrooms and I'd forgotten to soak the walnuts but yummers anyhoo, tomato sauce the same and the raita too. We used brocolli leaves at the wrap and added some shredded lettuce and grated carrot and they were totally yummy.

They were so delicious. If you haven't already eaten brocoli leaves I suggest you try them. They are dark in colour and so probably good for nutritional elements and low taste. Quite sweet. And they make excellent wraps and smoothies. At this stage of the season they are not very big but by the end of the season they are HUGE! Enjoy!

I want to go to Cafe Gratitude in San Fran!  Preferably.... by some divine providence, Michael Franti, fresh off a world wide tour, would be at the neighbouring table with his guitar, and he would serenade me during my meal.

I have been lucky enough to of tried Jen's Curried Not Meat Balls with Noodles and Raita and it was one the yummiest raw Italian dishes I have had.

what proportions of walnuts to mushrooms did you use?
ie 1c of each?
