This recipe is my version of a laksa based upon a recipe that I got from a Raw Power work shop
It is absolutely delicious and comforting on a winters evening. It is made in two parts, the soup and the noodles
Soup1 baby coconut
1/2 lime juiced
1/4 bunch coriander - can use more i'm not keen on too much spicey food
2 stalks basil
1/2 cm piece chilli -can use more i'm not keen on too much spicey food
1/2 cm piece ginger
2 dates
1cm piece lemongrass
1 lime leaf
tamari to taste
place coconut and flesh and other ingredients into blender and blend blend blend till smooth, then gently warm to 45 degreesC,
Noodles and veg
1/4 red capsicum
1/2 grated carrot
1/4 salad onion ( i use purple one makes it look pretty)
1/2 -1 corn cob de kerneld

1 zucchini (white ones are sweeter) spiralled
hand full baby spinach to taste
green peas are nice too
some chopped pecan nuts are delicious in it or pine nuts are good as well.
mix veg and add to soup and warm as well - and Yummmmy
no pic sorry but it is a green soup cause of all the herbs, so the colours from the veg make it verrry appealing.
