Tonight we felt like salad but not a savoury one so I threw this little number together. We had already had a big Green Smoothie each and so this was just perfect an hour or so after that!

Salad

Baby Spinach and rocket
apple
pear
orange

Dressing

Orange juice
1 whole vanilla bean

Arrange the salad on your plate in a way that pleases you.

Blend your orange juice and vanilla bean and pour over your salad! I topped mine with a couple of agave cinnamon walnuts but flowers would have been nice or your garnish of choice. Just delightful!

Good idea! I have been making lots of yummy salads with apple lately too. It goes really well with celery. My favourite so far is fuji apple, finely processed celery, cucumber, blood orange juice and tomato or parsley (both optional).
