I used a cauliflower recipe as a basis for this Tabouli.
Ingredients for cous cous
  • 1/2 small carrot - cut into rounds then chop finely in processor leave it in the machine then add
    1/4 cauliflower flowers roughly chopped then placed into food processor till it looks like couscous
    semi sundried tomatoes- sliced
    fresh mini tomatoes - sliced into quarters
    olives
    parsley chopped roughly
    a couple of basil leaves chopped roughly
    some coriander leaves chopped roughly
    spring onions cross cut finely
    corn would be a good addition
    so would pinenuts
    Place all into a bowl and toss
    No real quantities needed all can be done to taste

The dressing
  • 1 tbsp tahini
    1 desertspoon olive oil
    juice of 1/2 orange and 1/2 lemon
    small clove of garlic crushed
    bit of honey and bit of salt to taste
    throw all into a jar and shake like mad
    pour over cous cous and enjoy
very filling, I ate it all but i think i should have only eaten half so i'd say that it serves two people
