I made mum this salad today. She loved it, which is wonderful How fun would it be to have everyone in my house eating smiley style But hey, this week so far has been fabulous, it's all about supporting and loving people where they are at

Avocado and Tomato Salad

1 Avocado, finely diced
1 Tomato, finely diced
Squeeze of lemon
Drizzle of agave
Mixed dried herbs to taste (I much prefer fresh herbs, but still smile when dried is all I've got )
Pinch of Celtic sea salt

Combine all these ingredients and let sit to make merry tunes together

Wash a decent sized bowl full of mixed salad greens, pat dry.

Layer greens, then avocado mix, two to three times, depending on the amount of mix and greens you made
