These are the perfect food if you once loved those cooked nachoes!

blend together:
corn
ground flax seeds
little water
bit of nama shoyu

this should be thick and spread it on your teflex sheet - into the dehydrator. after a few hours, make cuts to look like nacho chips. keep drying until crisp.

thinly slice on the mandolin: jicama, carrots, jerusalem artichoke, zucchini - all or a combo of any of these.

salsa:
chop tomatoes
add: cilantro, lemon juice, finely chopped: onion, bell peppers

guacamole:
mash avocados and add: cilantro, lemon juice - i like it just li ke that but u can also add bits of sundried tomato which is nice.

cheese:
grated zucchini if u want a lighter dish OTHERWISE:
tahini cheese:
blend together: tahini, lemon juice, a little water, few drops nama shoyu.

toppings: olives, green onions

assemble these nachos just like the original kind.

yumm!!!

This looks absolutely DELICIOUS!! I can't wait to try it. We just bought a new 9 tray Excalibur dejhydrator.. so I'm ready to make LOTS of delicious stuff!

In California many restauants have tostadas. Similiar to the nacho recipe you posted above.

A corn flax shell, topped witha creamy dip, then a tomato dip, then shredded lettuce, chopped tomatoes, silantro, onion and sometimes olives. It's just incredible!

Hey!

hope you got to try the nachos! OOh, a 9  tray, thats awesome. i have the 5 tray Excalibur and i love it altho i havent used it lately since i was at college, but now im at home and can use it again!

im hoping to go to the raw restaurants in california and new york one day in the future!!!!!!

Those nachos sound great.  I've got my own mexican meal that I thought I'd share.  I got the idea from Piers and Sheryl.

BEAN TACO

Cabbage leaf acts as the taco

Fillings:
Bean dip (see below)
Avocado
Dehdrated capsicum and onion - massive flavour
Your favourite topping - Tomato/sprouts/chilli/olives etc

Bean dip - 1 cup of kidney beans, chickpeas, any beans! then blend together in a food processor with soaked sunflower seeds and enough liquid to keep the mixture moving and add tahini, garlic (chili `option`al) and salt to taste.

So easy and very yummy!  The combination of the nutty dip with the creamy avocado and sweet dehydrated capsicum is divine - lots of texture and flavour.
