If anybody loves their mushrooms try this recepie I whipped up italian inspired
*I used say half kilo button mushrooms( finally slice)
or you can use any other kinds of mushrooms but i find button works best
*1-2 cloves garlic ( you can increase decrease ) grated or minced
* I handfull of continental Parsley finely chopped
* 1-2 lemmons juiced say about 1/4 cup
* Good quality extra virgion olive oil say about 1/2-1/3 cup
celtic salt and freshly cracked pepper optional ( but I add it)
( for variation you can also add chopped red chillies those of you who like things HOT or evern grated lemmon rind)

Simply Chop musshys finley has to be finely it takes time but its work it. Also chop parsley.
In a glass jug place olive oil, lemmon, salt pepper and galic and grab a fork and beat it till its creammy like. If its not it means you added too much lemmon and not enough olive oil. Add this to mushroom and stir very well in a bowel, let stand for say 5min ( make sure you have coverd mushys well with marinade )finally add the chopped parley and its done!
This can be used in wraps on seed crackers. If keeps very well in the fridge covered for a couple of weeks although mine never lasts that long !
You can vary this recepie with different quantities and some people might not like the oiliness...but comming from European backgrd we cant do without our olive oil!
