It's the end of the week and time to clean out the fridge (we empty it each week).

Today I made 'stir fry'.

In the food processor I chopped up: button squash, pumpkin, parsley, chives, rosemary, garlic, basil and a small handful of cashews (until it was fiarly small but not minced). Then I drizzled over some coconut oil, a pinch of salt and myer lemon juice. Dehydrate for about 30 minutes and serve. It's DELICIOUS!

You could do this with any vegetable. The button squash/zucchini works well because it softens easily and absorbs flavours. The herbns are great for flavour and really add to the dish!

I think it would work great in lettuce/cabbage wraps too.
