With Testa: These nibs still contain their highly nutritional
testa's (the edible skin, like that on an almond). The testa has shown
protective benefits in clinical trials against moulds, fungii and
bacteria (including bacteria capable of causing tooth decay). Growing
in such a wet, tropical environment cacao needs strong defences to
protect itself... which are now also available to you!
Criollo
Variety: Our beans come from a non-hybrid ancient Criollo variety
of cacao. Criollo beans are the most delicate and prized beans
produced and they represent an astonishing 1% of the world mass
production. This variety is often referred to as the "King of
Cacao." They are generally priced far higher on the
international cacao market and are usually blended with other beans
to create cheap blends with a less exotic flavour.
The
highest quality chocolate usually has the highest percentage of
Criollo cacao in its composition. We could try and sell inferior
beans at the same cost, but we personally eat what we sell and my
body (and taste buds) demand quality!
Low Microbe Count: Because of the exceptional quality and standards under
which these beans are processed, any foreign microbe/bacteria activity is virtually
non existent on the skin and inner nib. This is an extraordinary feat considering
that cacao beans come from a moist and slimy fruit grown in the hot jungle.
No other cacao bean sources can claim this safety feature (and back it up with
independant testing).
Delicious, Tasty: The unique process we use retains the purity, fine
aroma, fairly uniform large size, purplish-brown color, easy peeling (of the
beans) and the nutritional impact that nature intended.
High
Flavour, No Roasting: Because of the quality of the bean and of
our processing, you get to enjoy a rich, raw chocolate flavour and
aroma without roasting.
Low
Acid: Our beans have extremely low acid levels. Most other
varieties have much higher levels of acid spoiling the flavour with
an unpleasant sour taste.

They are not messy and easy to pick up. I find other cacao beans I have tried in the past, crumble and are difficult to work with.
I jam these ones straight into fresh dates, and they are bliss.
