Often referred to as the apple of the earth or strawberry jicama, yacon is actually a relative of the sunflower. Yacon is a perennial plant known for it's crisp sweet tuberous root. Known as one of the 'lost crops of the Incas' yacon has been used for thousands of years to sweeten dishes and delight tastebuds. Yacon syrup is dark brown in colour, with a full bodied flavour that will give your raw dishes a uniqueness all of their own especially desserts. The flavour is strong and so only very little is needed to sweeten your dishes. As a prebiotic, yacon is good for digestion, stimulates positive colon health, and helps with the absorption of calcium and vitamins. Yacon syrup can contain approximately 30% FOS and low proportions of simple sugars (e.g., glucose, fructose and sucrose). The human body has no enzyme to hydrolyze FOS, so (even though it tastes sweet) it passes through the digestive tract unmetabolized, providing few calories, a marketing strength for dieters and diabetics. Yacon also acts as a prebiotic. The undigested portion of yacon serves as food for "friendly" bacteria, such as Bifidobacterium and Lactobacillus species, in the colon.
