Chia was a revered food by the Indians of the south west and Mexico, known the ancient Aztec running seed for hundreds of years. The Aztec runners, used to relay messages on foot across the country would run for days on end barely stopping, fueled by only a small bagful of Chia. Ancient records showed the Aztec warriors living off Chia seed during their conquests, while the Indians of the south west would march for 24 hours at a time powered on only a teaspoon. Over by the Colorado River to the California coast trading Indians would bring only the Chia seed for their nourishment for days on end. How does chia make this possible? Chia is able to hold more than 12 times its weight in water with its highly specialised hydrophilic colloids (the substances that make up underlying elements of all our living cells). It's unique structure (seeds with water will turn to a gel in only 15 minutes) is able to prolong the conversion of carbohydrates into sugar over many hours (with obvious benefits for diabetics and endurance athletes). These compounds are usually destroyed by cooking, however even in raw foods they usually require digestion to get to the useability found in chia. In the body these hydrophyllic compounds are a great source of prolonged protein (as well as evening out sugar conversion) making them an ideal food for any kind of strength, muscle or tissue building (such as in growth periods if children and adolescents, pregnancy and lactation). Chia seeds are also the richest vegan plant source of omega 3's known, eclipsing flax in the unsaturated fatty acid, linoleic, which the body cannot manufacture. Omega 3's comprise around one third of the entire brain, making them vital especially in infancy. They are also exceptional sources of calcium uniquely combined by nature with high levels of boron which catalyses it's the absorption and utilization by the body.

It gels into a pudding that is so delicious to eat. Within days of adding more chia to my diet my skin feels so smooth and soft. I can see such a startling difference. I haven't really noticed much of a difference between white and black, but white is definitely better for some recipes where colour (or lack of) is important. One day soon I plan on growing a chia pet too! Just have to find the perfect unfinished clay animal for the base. |
